Tacos de Lengua (Beef Tongue)

Prepared correctly these are melt-in-your-mouth tender, flavourful and the texture is great. Beef tongue’s home of homes is truly the taco, w/ a little Salsa Verde, Avocado, Radish & Cilantro.

the way you know you are at an authentic taqueria is if there are “tacos de lengua” on the menu. If you find yourself at such a place, try some!

Red Snapper Tacos, lemon chipotle aioli, red chili, napa slaw & micro greens.

Red snapper was stuffed with lemon, rosemary, fennel and a touch of butter. 430 for 20 mins does it. Don’t forget to work a good amount of seasoning into those slits on the side of the fish.

This execution of fish tacos is light and amazing. TRY IT!

Pulled chicken tacos w/ yellow salsa, avocado, cilantro, arugula sprouts & homemade corn tortillas.

For true authentic flavour toast the cumin seeds and crush at home. If you got a electric coffee grinder I would sugest that. The mortar and pestle seem to leave pieces a little to course. Even a 4 hour braise won’t break that shit down.

Homemade Corn Tortillas
Making these from scratch is easy and well worth it. I used my homemade cheese press as the tortilla press, it required my full body weight to get em to the desired thickness. The days of buying shit packaged tortillas is over. NEVER AGAIN!

Ingredients: Masa de Harina (Corn flour), Salt & Water
Dead easy.
